Cook your own chicken rice at Creative Culinaire

Tata! We can now cook our own Chicken rice! Yes, Singapore’s National dish 🙂

Everyone loves chicken rice, the fragrant oily white rice, the tender steamed chicken and the dark sauce with chili paste. But how many of us got the chance to butcher a chicken, tear out the innards, and even marinate the chicken?

We jump at the opportunity when Creative Culinaire invited us to cook our own chicken rice.

After listening to Chef Judy’s instruction, Boon Yee (no3) and me tried to remember the steps, portions and sequence.

Our junior Master Chef wannabe preparing the ingredient, stock soup base and concocting our own spices (garlic, ginger, pandan leaf etc).

We are supposed to stir the pot until we can smell the fragrant chicken essence infused with garlic. In fact, the whole kitchen was enveloped in chicken rice fragrance 🙂

We pickup some news and tips from Chef Judy along the cooking class too.

Example, Chicken Rice is one of the top 50 World cuisines and originated from Hai Nan China (thus the name 海南鸡饭) . Singapore has R&D the recipe to suit our own palate.

We heard Chicken fat was used to flavour the rice in the good old days, but health-conscious Singapore has opted out fatty oil.

Kampong chicken was preferred then, although meat is tougher but it was a healthier option (no injections).

One of the highlight for our class, we needed to butcher and cut up the chicken. This was no easy task with our small scissor, even adults have problem cutting open the chicken!

Next, we need to remove the innards, we will spare you the gloss bloody photos. I told Boon Yee the plate of chicken rice in school always look so polished and presentable, but he now realised the hard preparation work.

Boil and poach the chicken, then keep it cool, we want to keep the meat tender.

Besides learning to cook, kids learn about keeping the kitchen workspace and utensils clean. If he does aspire to be a chef one day, this would be crucial for him to remember. Meanwhile, he can help to keep our home  kitchen neat.

We always remembered to have fun along our cooking session, and we now know why the chicken portion kept shrinking!

I did it for novelty and partially because I was tired 🙂

Come 18-19 November 2017, OCBC Cycle will start pedaling from Singapore Sports Hub. Does not matter whether you are cycling for 100 metres (2-3 years old cute) or 20 minutes (for those age 5 to 9 years old), or adults 23km and 42km (The Straits Times Ride and The Sportive Ride respectively).

We are happy Boon Wee (no1) will be joining me in the 23km category (so hard to book a slot in his busy calendar) I am looking forward to climbing up Benjamin Sheares Bridge with the Dads again!
